Why not just select the white colour?

The classic way to remove a white background — a magic wand or “select by colour” — deletes every pixel close to white. That fails in both directions: it punches holes in white shirts, paper, teeth, and packaging, and it leaves behind everything the camera did not record as pure white — shadows under the product, a warm cast from indoor light, the grey corners of a scan.
